Dimitris Papaioannou is one of the most talented figures with great contribution in the Bar scene both in Greece and abroad. His professional career starting in 2002 has enlightened us about travel and research simultaneously as well as for the development of taste ‘’Illinois Bartending school’’, ‘’Barskolan Miami’’, Fl, participation and world championships in international and Mediterranean competitions alongside with his travels for taste development research from the Peruvian Andes to "Gastrophysic" and "Food Paring" seminars New York, Chicago Institute of Taste.
In 2007 it is time to leave Greece and go abroad again, specifically to London and Spain where he will experience the highest level of maturity and sophistication accumulating in his working experience and will share with a group of creators the utmost gastronomic experience by putting in his CV collaborations with research teams from the global gastronomic scene.
From 2008 to 2011 he traveled to 12 different countries in Latin America,Japan and America aiming for exerting the influence over the sense of taste and research on distillery and spirits.
There, his experience in an international cocktail bar matured, improving his perception in relation to creativity and the promotion of taste through new innovative and pioneering methods and breakthrough techniques.
In 2018 he was awarded by "Greek taste beyond borders" as a top bartender and a year after 2019 as the most interactive mixologist of the decade based on research for cocktails with Greek spirits worldwide.
His creations have been presented by Funky Gourmet Greece, Alinea Chicago,
Le Seizena Courchevel France, GnH London, El Jiron Athens, Greece and from many other award-winning restaurant cocktail bars around the world.
